Blueberry Coconut Muffins (SCD/Gluten Free)

Well today is the day! I have officially began my food blog. For those of you wondering what or why I have started this check out the about the author section. Essentially my health required me to start to change my diet to include foods which promoted not only a better well-being but also better intestinal health. My blog is dedicated to providing delicious recipes that are not only delicious but also will help you lose weight, feel better and help those adhering to the specific carbohydrate diet, Adkins diets, or anyone’s lifestyle seeking to eat their way to a healthy body.

Today’s recipe is a staple for me! Everyday day at work I crave snacks but often find the only options being sugary treats or bready baked goods! While delicious I can’t have any of them! After much testing these blueberry coconut muffins have saved the day! Not only are they SCD friendly but also gluten free!!

The backbone of these muffins is coconut flour and honey, ingredients both easily digested and packed full of incredible health benefits (Click the links!). For those who like to read the “finer print” and get the full nutritional breakdown click below. I have done my best to figure out the math!

A few things to keep in mind as you do this recipe. Only unpasteurized honey should be used!! This is a rule of thumb!! Pasteurized honey lacks all the great properties you expect from honey due to the manufacturing heating. To make measuring honey easier coat your measuring spoon with a thin layer of vegetable oil!

As for the coconut oil. It’s solid at room temperature! So you guessed it! You will need to heat it up a bit before you mix it into the recipe. The great thing is if you melt too much just pour the excess back into your jar so not to waste any!!
