Butternut Squash Latkes

Where there is a will, there is a grain free alternative. If you are like me, you miss the delicious taste and crunch of potatoes! Especially good ole’ fashion latkes! Well not to fear with a few slight adjustments you can have a great updated version. The hardest part about this recipe is in fact just cutting the squash. I personally hate cutting squash but once you slice this in half you have the option of shredding it (for this recipe), cutting it down into french fry like shapes and even chunks. If you are making fries refer back to my earlier recipe Butternut spiced chips.

Also if you are new to cutting squash! Take my advice, poor some wine, it always helps my cooking! Enjoy!

Fresh spaghetti squash with SCD meat sauce

This past weekend I was lucky enough to have a good friend of mine come into town for a visit.  As many of you who are on a grain-free/SCD diet you know part of the trick of cooking for guests is making foods that will have your guests not even realizing they haven’t had any grains/gluten/etc and still getting the same enjoyment. This weekend I decided I would do a grain free healthy Spaghetti. Instead of pasta I slow cooked a spaghetti squash and turned into a stringy like pasta base. One large squash will give you enough mock-pasta for about 3-4 people depending on portion size.

For the sauce fresh lean ground beef, lots of vegetables and of course some great spices help. My one suggestion for this recipe is to make your own tomato sauce. This can be easily done and recipe’s found on most SCD food blogs. Alternately you can use a can of diced tomatoes still in their juice. The meat sauce will make lots so remember to freeze whatever you do not use for nights you feel lazy.

However you decide to do it this recipe is probably one of my favorites and lets me pretend I’m having pasta!
